This traditional Greek entreé is prepared in several stages, then assembled and baked.
Meat Sauce Filling
- 1 tbs. butter
- 2 cloves garlic
- 3 pinch parsley
- 1 tbs. pepper
- 1 tbs. salt
- 1 whole onion
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 2 lbs. ground beef
- 16 oz. tomato sauce
Heat butter in a large pan, sauté beef and onion, then add remaining ingredients. Simmer five to ten minutes, or until cooked through.
- 1/2 cup butter
- 2 whole eggs
- 1 cup parmesan or kefalotiri
- 4 cups hot milk
- 3 pinch nutmeg
- 1 tsp. pepper
- 1 tsp. salt
- 3/4 cup white flour
Melt butter over medium heat in pan, then add flour, stirring continuously. Add hot milk and continue to stir until smooth and thick. Then add salt, pepper, and nutmeg. Remove from heat and let cool. Mix in cheese and eggs.
- 1 lb. bucatini tube pasta (ok to use number 7 macaroni)
Cook pasta as directed on package.
Assembling the Pastitsio
Grease large baking pan. Put cooked pasta in baking pan, layer with meat sauce and then pour Béchamel on top. Sprinkle with paprika and bake at 350° for about 45 minutes.
